        When Billy Wang, owner of Umi Restaurant in Columbus and Starkville and partner Mark Castleberry of Castle Properties were naming their new Cajun-Asian Seafood restaurant they looked for a name that would capture the heart and soul of the Cajun fare they will be serving and give a nod to the Asian fusion that will influence the menu.
